Pomelo salad

Pomelo salad

Serves: 4

Ingredients

- 3 tbsp oil
- 1 clove of garlic, finely chopped
- 1 chilli, finely chopped
- 3 shallots or 1 onions, thinly sliced
- 1 tsp sugar
- 1/4 tsp salt
- 1 tbsp fish sauce (may substitute with 100g fresh shrimps or chicken, cut into very small pieces)
- 1/4 lime or lemon, juice only
- 1 pomelo, peeled, membranes removed, seeded, segments halved, chilled in refrigerator.
- 5 coriander leaves (optional), chopped

Method

1. Heat the oil over medium heat.

2. Fry the garlic, chilli, shallots for 3 minutes.

3. If using fresh shrimps or chicken instead of fish sauce, add them now. Fry until the meat is cooked.

4. Add sugar, salt, fish sauce & lime juice. Fry until sugar is melted.

5. Remove from heat. Stir in pomelo.

6. Sprinkle the coriander leaves. Serve.

Did you know...

1. Strips of pork tenderloin or bacon can be added into this salad to add more aroma.

2. Pomelo salad goes very well with keropok (deep fried fish crackers made of flour, fish, salt and water, which is a very popular snack in South-East Asia).

3. Fresh pomelo is one of the traditional Chinese gifts during the Chinese New Year. Other gifts include mandarin orange, Chinese New Year sweet rice cake Nian Gao(which we call 'Year cake' literally), biscuits and etc. Traditionally we would put a Chinese character cut out from a piece of red colour paper and glue it upside down on the gift, because in Mandarin, upside down sounds very similar to arrived. The character would be something that symbolises good luck, such as Fu.
