Ingredients
- 1 tsp sesame seed
- 2 tbsp oil
- 1 chilli, finely chopped
- 1 onion
- 1/2 carrot, peeled
- 1 tsp salt
- 1/4 pineapple, peeled
- 1 cucumber, peeled
- sugar (add if a pineapple is not sweet enough)
- 2 tbsp vinegar
- 1/4 lemon, juice only
- 3 tsp peanuts, roasted, chopped
Method
1. Cut cucumber into sticks, about 2.5 cm long. Do not use the centre part if it has seeds. Cut the pineapple into triangles. Cut the carrot into shred, or use a shredder.
2. Place a medium pot over gentle heat. Add sesame. Keep shaking the pot to prevent the sesame from burning.
3. When sesame starts to pop, add oil, chilli, onion and carrot. Stir fry for 2 minutes.
4. Add sugar if the pineapple is not sweet enough.
5. Add salt then pineapple and cucumber. Stir. Turn off the heat after 2 minutes.
6. Add vinegar and lemon juice. Stir to mix well.
7. Sprinkle the peanuts on the top just before serving.
8. Serve chilled.
