Lemon chicken recipe - Limonin piščanec

A bowl of rice served with lemon chicken

Lemon chicken is best served with plain rice.

Serves: 2
Cooking time: 30 minutes

Ingredients

- 300 g chicken fillets
- 2 tbsp wheat flour
- 1 egg
- 1 clove garlic (optional), finely chopped
- 1 cup breadcrumbs
- 1 1/2 tsp sesame seed
- oil for deep frying (enough to cover the fillet)

Ingredients for the sauce

- 1 onion, cut into rings
- 2 tsp sugar
- 4 tbsp water
- 2 pinch corn or wheat flour
- 1/2 lemon, squeeze for the juice
- 1 tbsp rice wine or white grape wine
- 1/4 tsp salt

Method

1. Heat the oil over medium heat.

2. Break the egg and put it into a bowl. Add the garlic. Beat the egg until all egg white & egg yolk are mixed.

3. Mix breadcrumbs with sesame seeds.

4. Coat the chicken with wheat flour (shake off the excess), then with the beaten egg and finally with breadcrumbs mixture.

5. Fry the chicken until golden brown. Put aside (on a piece of kitchen paper towel to suck away some excess oil).

Method for the sauce

6. Take 3 tablespoons of oil left from deep frying the chicken and heat it up in a small pot or sauce pan over medium high heat.

7. Stir fry the onion rings until light brown.

8. Add sugar. Stir occasionally until all the sugar has melted.

9. Add water, then flour using fingers to avoid clumps. Stir.

10. Add lemon juice, wine & salt.

11. After the wine has evaporated, pour the sauce over the chicken (do remember to remove the paper towel beforehand!) and serve.

Note

To be more adventurous, you may add a chilli (chopped, together with the seeds) into your sauce when stir frying the onion ;)”
